Extract Text works on PDFs that already have selectable text. OCR is for scanned PDFs (images of documents) — it recognizes the characters in the image and gives you back a visually identical PDF with a searchable text layer.

Our OCR uses preprocessing (grayscale, normalization) to improve recognition. For best results, use scans at 200+ DPI with minimal skew.
